The Rabbit House restaurant, located in New York City, was created my Chef / Owner, Yoshiko Sakuma. Rabbit House menu focuses on European and Japanese infused tapas selection paired with Asian and European cocktail.
Yoshiko Sakuma was born in Japan. Her grandparents were farmers of Fukushima and parents restaurant owners. Honing her pastries and cooking culinary skills, she was able to work with renown culinary establishments such as, Chef David Bouley at both Bouley Restaurant and Bouley Bakery, and Michelin-starred restaurant Danube, Mario Batali’s Del Posto, and at Jewel Bako under Executive Sushi Chef Yoshi Kousaka direction.
Sakuma’s culinary turning point was when she was working for Latin/Mediterranean restaurant Gardenia, as a Sous Chef, she realized she was ready to create her own culinary signature and created The Rabbit House.
It was a great opportunity for Brooklyn Soul Clap team to visit Rabbit house intimate size restaurant, in Chinatown. The Sake based Bloody Mary cocktail , Japanese Egg Benedict, Taiyaki Waffle (shaped like a fish), and the side order of Japanese Berkshire Sausage held up to their Japanese/European culinary concept. The table presentation was well coordinated with calm cooling hues of blue and white plates and beaded coasters. The white rabbit shaped napkins extended the white rabbit visual theme throughout restaurant. The fresh flowers on tables added the hint of organic beauty which falls inline with the fresh organic ingredients used in Sakuma’s menu. She offers vegetarian and gluten free options on her menu.
